What is Milk?
88% Water
4% Fat
3.5% Protein
4%Lactose sugar
0.5% Minerals

 

 

 









How is cheese made?
1. Cheese forms naturally when bacteria in milk turn lactose into energy and produce lactic acid.

2.  The acid, with the help of the enzyme Rennilase, causes the milk protein casein to clump up - forming curds.

3.  The coagulated protein is separated from the liquid whey and you have cheese.

What are curds and Whey?
Curds: the solid
protein part of milk.

Whey: mostly water (appears on top of yogurt and sour cream)

 

What variables are involved in making cheese?
Type of milk
Type of acid
Type of enzyme 
Amount of acid
Amount of enzyme
Stirring rate
Temperature

Baby Burps???
The acid in a baby's stomach helps in the clumping of the milk protein, forming curds.

So, if a baby spits up after drinking milk.....you have cheese.
